焼きのこだわり
Attention on the way of grilling

Unlike Kanto style which eel is splited, then grilled, we apply Kansai style which unsplited living eel, even be still with head will be skewered and grilled directly without being steamed. This way is called "Nagayaki". Since eel being kept intact, the original umami (the fat) is consequently kept fully, completely. In addtion to, Binchotan (high quality hardwood charcoal) is used in Takewaka, and this is our secret to make eel crispy outside and fluffy inside thanks to the effect of the high temperature and infrared ray that only Binchotan has.

ひつまぶしのこだわり
Outstanding Hitsumabushi

When you come to Takewaka Eel restaurant, please try our Hitsumabushi. We put many attentions from the dedicated stove to bichotan charcoal, which can raise the grilling heat up to nearly 1,000 degrees Celsius. The Tsuyahime rice going with eel in Hitsumabushi is also carefully selected from Yamagata Prefecture. Enjoy the Takewaka Hitsumabushi that combines three outstanding factors of "Eel", "Sauce" and "Rice".

Commitment to Freshness

For many years, we have worked with reliable eel dealers in Mikawa Isshiki, Aichi Prefecture, a famous eel production area. Daily, eels after having been carefully selected by a professional expert are directly delivered to here. Inside the store, living eels are kept in a pool and the freshness can be maintained by keeping the pool full of fresh water at a certain temperature. Please feel free to ask staff for an inside store tour to have a look at eel pool.

Using carefully selected soy sauce, mirin and sugar, we created a special sauce that goes well with Hitsumabushi by over and over experiments.

Access to our store

3 min-walking-distance from the Southwest Exit of Shimo-Kitazawa Station of the Keio Inokashira Line and the Odakyu Line.

From the Southwest exit of Shimo-Kitazawa station, please turn right at the South Exit of Shopping Street. Then walking forward, you will see a three-way intersection. Please go straight to the rightmost street and then walk along the right-curving-road. You will find our store on the 1st floor of the building on your right.

※We do not have car parking lot. (But there is a coin parking lot nearby.)
